Eid Mubarik – Risalamande with Strawberry Coulis

An early Eid Mubarik to all of you!

As part of a larger Hello! Magazine (Pakistan) feature on Spice Spoon, I was asked to share a recipe which meant something to me. This is a Danish-style rice pudding, which Mor Mor Inge, Zain’s maternal grandmother used to make. Zain’s grandfather, Agha Jan, and Mor Mor, which means grandmother in Danish, met after World War II in London and fell in love with each other. After Mor Mor Inge’s marriage to Agha Jan, she left Denmark and spent the rest of her life in Pakistan, where she passed away when Zain was a little boy. Mor Mor Inge was a beautiful lady who reminds me of Grace Kelly in many ways. Now, every year in Pakistan, during Christmas-time, my mother-in-law and her siblings, spouses and children, get together to celebrate Christmas the way Mor Mor Inge would have celebrated it. I was there last year and the pièce de résistance was this rice pudding. The whipped cream folded into it in the end elevates it to another level.
